On Labor Day the in-laws and the fam went apple picking at the Sky Top Orchard in Flatrock, NC. If you have never been, you MUST go! Its fun, you can munch on all the apples you want while picking them, the Orchard has the best apple donuts known.to.man, and its pretty affordable. We have a huge bag of apples sitting in the fridge so today I went on the hunt for delish and HEALTHY apple recipes. You would think its easy to find healthy apple recipes, but… not so much! 😛 A lot of them were dessert foods filled with sugar and butter. After much frustration, I found a Spinach Apple Salad recipe. I tweaked it to my liking… and Score! I have a fav!
Apple and Green Salad with Homemade Vinaigrette Dressing
2 tablespoons cider vinegar
1 tablespoon balsamic vinegar
3 tablespoons extra virgin olive oil
1 tablespoon honey (can be omitted)
salt and (white) pepper to taste
3 baby carrots (grated)
1 1/2 large apples, unpeeled
1/4 dried fruit and nut mix
In a bowl combine dressing ingredients. Add topping ingredients, toss lightly to coat. Cover and let stand, room temp, for 10 minutes. Just before serving, in a large bowl combine your favorite green salad, add dressing, and toss. Finish off with a drizzle of lime or lemon juice.
Note: the Vinaigrette dressing can be changed based on what you like. Add spices, try different oil and vinegar combinations, switch out the juices, add a little red onion (I HATE raw onion). Have fun with it. Heres a link to ideas on how to change-up the basic vinaigrette.
