Today in my Fall into Fitness PiYo Challenge I did the Core workout. One of my favorite in the PiYo series because I know I have a bit of a mommy tummy to deal with and I want some abs! I’ve never had them before. However, along with the core exercise, diet is key to leaning out and getting those abs to show through. When I hear experts and trainers talk they consistently agree that you cant out exercise a bad diet.
I like to meal plan on Sundays, keeping in mind I need to use whats already in my kitchen … because I’m cheap and I want to go ahead and use what I already have. Here is my meal planning menu for this week. Its all animal-free, I cook enough for myself and my family and then my hubby will cook the meat for every one else (Im the soul vegetarian). For some of the meals I’m using the Beachbody Fixate cook book (so if you want a review of that particular meal or curious about ordering it ($15), shoot me a comment and I can walk you through that). I also find a lot of recipes on Pinterest! Its flooded with healthy options but you do have to pay attention to the ingredients because not all are meat free.
- Shakeology with unsweetened coconut milk and banana
- M- Spicy tofu and cabbage, baked sweet potato, broccoli
- T- Fixate Zoodles with veggie tomato sauce
- W- Cauliflower steaks with mushroom gravy and roasted sweet potatoes
- T- Leftovers
- F- Veggie burger, baked beans, and slaw
- S- PB&J (lol)
- M- Fixate chili over wheat pasta
- T- Leftovers
- W- Fixate stuffed bell peppers and peas
- T- Burgers, baked beans, corn
- F- Tofu, carrots, and green beans
- S- Grilled veggies with brown rice
As a busy, homeschooling mom I really do not have the time or energy to cook some over the top meals but all of these are very do-able. Plus with a little prep work (cleaning and chopping veggies, batch cooking the tofu) I dont actually have to spend very much time cooking it because a lot of the work is already done. Score!
So I cant promise that this blog post will make a lot of since, Im writing this while sitting in front of The Bachelor! Its really corny tonight but I cant not watch, its like a car accident. Apparently theres suppose to be some kind of xboyfriend drama. Oooh juicy! 🙂 BTW, this bachelor isn’t that cute. They could have done better…
This past Thursday was Valentines Day! Actually for me, it was more like Valentines Week. I was naughty! I bought the hubby a chocolate cake from Publix (a non-vegan cake) and ended up eating some. On top of that we ate out quite a bit.. Chipotle on Tuesday, Carrabbas on Thursday, Thai Spice on Saturday, and Mexican on Sunday! Yikes. Even though I ate vegan at all of these I managed to gain 2lbs. Im at 186lbs as of this morning. Its no surprise really! I def cannot pig out like that anymore. Lol. On top of that Ive been dealing with sickness and grumpy excessively clingy baby = very little exercise. And of course I had to hurt myself! Saturday I was chasing the baby and ran into the wall. AhHahaha. Funny now, not funny then! I kicked the fool out of the wall and now the right side of my foot and pinky toe is bruised. Not too painful today so I think I’ll be able to run tomorrow. YES! After I get done blogging I plan on doing some situps and whatnot while im watching TV. So at least today isn’t a complete bust.
I must say, even though I was a little glutinous this past week I still managed to rock it on my Valentine’s Day date! Skinny jeans, a silk blouse, skinny belt, and some sexy high heels! Of course I took a pic! And of course I have to post!
Not Too Shabby!
One way In getting back on track is that Im eating raw lunches for Lent. Now, Im Baptist and we usually don’t practice Lent but I almost always do. So far so good! Ive done salads with different toppings which keeps it interesting and not boring. ((A mama tip, those breastfeeding shouldnt/cant totally go raw. When you eat raw the toxins will go out of your body into your breast milk, which baby will then drink. So if you want to try raw only do it for one meal out of the day. And make sure youre eating enough calories throughout the day so your body can produce the milk.)) We are also going to be strict on our extra spending. No more going out to eat! I went to the grocery store today (70 bucks for this week’s groceries!!!) and have enough food so that we wont have to go out to eat. That’s huge for us, if I already have something planned for that night then Im not as likely to say to the hubby, You’ve got to take me out tonight!
But the things Im most excited about it that my dad made a bet with me. For every pound I lost he will give me $1. I have 60 more lbs to go until Im at my goal. Im excited to be $60 richer! And I made a ‘bet’ with myself that when Im at 175lbs Im going to get my hair did! Ombre is all the rage right now in hair color, I really want a new cut (maybe bangs??) and obmre color! If not ombre then def go a mahogany color. Itll be HOT!

Saturday was the first day of FALL! Finally, fall is here! And it actually felt like fall here. The weather was perfect so the fam and I enjoyed the weekend outside. We discovered a new park in town and the playground is built like a fort. Its a kid’s dream! (Except for the jerks that graffitied some of the equipment. Punks!) If you want to feel like a kid again go to the park and play around. Im not ashamed to admit that I had way too much fun swinging and sliding. The child wanted me to play and run around with him. When we got to the slide I was thinking, theres no way Im going to be able to fit into that thing! (It was one of those tunnel slides) How embarrassing it would have been if I attempted to get into that thing and then got …stuck… or something! Even the child asked me if I was going to be able to fit into it… Gee, thanks kiddo. I love you too! But nope, I had plenty of wiggle room and made it all the way down just fine. TYVM. 😛 Oh and of course I brought my camera. (The child is at the stage where he doesnt really like to get his picture taken, so I didnt get any of him. Its like pulling teeth to make him cooperate.) Here are a few pics:

Sunday was the usual day for us, church and out to eat for lunch. That afternoon I started a craft. Im making a wreath for my mom and me. Ill make a post later about that when Im done. You kno, to show off my wonderful work! 😉 I also did some fundraising, the child is selling coupon books for his school. They bring 5 books home at a time and if they sell those 5 then they get 5 more to sell. The child wants to sell 20 in order to win the prize of a limo ride to a pizza restaurant. 20 freakin books! I dont know if we will be able to do that, I might end up buying most of them for him. Haha. Actually, I dont even know if we will buy one. Its mostly for fast food places and we never go anymore. Anyways, we walked around the neighborhood yesterday selling those books. Now, I think my kiddo is very cute! How could you say no to this face…

… we did end up selling all 5 books but it took us forever! Seriously, you dont have 10 bucks to buy a coupon book from this handsome kid whos doing a fundraiser for his christian school?! (Anyone want to buy a coupon book? Lol.)
It was a week ago yesterday that I made my Why So Wasteful post. I wanted to give a quick update. The goal was to stop being such a wasteful person, with regards to food. Cook the food that I have at home, not let the fresh foods get bad, stop running to the grocery store 50 billion times a week even when I have food in my pantry. We did end up going to the grocery store yesterday but only bought creamer (a requirement from the husband for his coffee), bread, and milk. I bet I still can get away with not buying anymore groceries until the weekend! I have a bunch of pasta, I have a feeling that by the end of the week we will have noodles coming out our ears! I bought an italian pasta cook book from books-a-million the other week (on sale for $10 and it was $40.. score!) and am excited to use it. Ill post recipes to any delish meals I make.
