Today in my Fall into Fitness PiYo Challenge I did the Core workout. One of my favorite in the PiYo series because I know I have a bit of a mommy tummy to deal with and I want some abs! I’ve never had them before. However, along with the core exercise, diet is key to leaning out and getting those abs to show through. When I hear experts and trainers talk they consistently agree that you cant out exercise a bad diet.
I like to meal plan on Sundays, keeping in mind I need to use whats already in my kitchen … because I’m cheap and I want to go ahead and use what I already have. Here is my meal planning menu for this week. Its all animal-free, I cook enough for myself and my family and then my hubby will cook the meat for every one else (Im the soul vegetarian). For some of the meals I’m using the Beachbody Fixate cook book (so if you want a review of that particular meal or curious about ordering it ($15), shoot me a comment and I can walk you through that). I also find a lot of recipes on Pinterest! Its flooded with healthy options but you do have to pay attention to the ingredients because not all are meat free.
- Shakeology with unsweetened coconut milk and banana
- M- Spicy tofu and cabbage, baked sweet potato, broccoli
- T- Fixate Zoodles with veggie tomato sauce
- W- Cauliflower steaks with mushroom gravy and roasted sweet potatoes
- T- Leftovers
- F- Veggie burger, baked beans, and slaw
- S- PB&J (lol)
- M- Fixate chili over wheat pasta
- T- Leftovers
- W- Fixate stuffed bell peppers and peas
- T- Burgers, baked beans, corn
- F- Tofu, carrots, and green beans
- S- Grilled veggies with brown rice
As a busy, homeschooling mom I really do not have the time or energy to cook some over the top meals but all of these are very do-able. Plus with a little prep work (cleaning and chopping veggies, batch cooking the tofu) I dont actually have to spend very much time cooking it because a lot of the work is already done. Score!
I know that it can be a little bit confusing when you’re trying to find info on how to eat better or what exercises to do. There are so many different paths to take and all kinds of information, everything gets so overwhelming, you might get discouraged even before you start. However, trying to change it up to live a healthy lifestyle really doesn’t have to be all that complicated. Move your body and eat clean foods.
It does help tremendously to have a go-to guide, something simply broken down that’ll help you navigate your way. I’ve had the pleasure of reading this pretty wonderful Simply Clean: Clean Eating 101 eBook, which is just that, a guide on how to eat clean. They detail some basic “rules” to help you make the right food choices. There’s also some great tips for meal prep… I love mushrooms, but hate how they go bad so fast! Did you know there’s a way of storing them in a brown paper bag, so that they last longer. I had no idea! The book also had some great tips on how to eat healthy- without spending tons of money doing so.
Added at the end are some meal ideas, with a sample meal plan and some recipes that sound pretty delish. Kale chips and banana ice cream, Ill take it. 😉 The entree meal ideas are mostly not meat-free (womp womp) but the recipes can be tweaked! Hahaha. Oh course they can be made veggie-friendly! Sub the ground beef with lentils, quinoa, millet, brown rice, black beans, or even tofu (if you’re feeling froggy, ha).
Oh! I almost forgot the best part, its an eBook. So when you’re out at the grocery store stuck with that big question of the day [Whats for dinner?!] you’ll have a simple clean eating guide at your fingertips, that’ll help you whip up an easy but healthy dinner. Score! Simply Clean

It’s weigh in time!
Wanna hear something funny.. I’m currently in by bed, typing on my iPhone, hiding, while the kid and the baby play in the living room! (Yes my bedroom is right off the living room, I can hear them. No they arnt in danger, lol). I told the kid I’d give him 3 bucks if he watched the baby so I could lay down for a min. … I’m taking a mommy-moment and it feels great!!!
I can hear that the baby is getting into one of the kitchen cabinets, it’s storage for our plastic plates, napkins, paper coffee cups, old baby bottles… I’m sure she’s making a mess but do I care right now? Nope! Ill deal with it in a few. If I went in there now then I wouldn’t be able to come back in my bedroom…the baby would fuss and demand for my attention.
Do I feel bad/guilty? Nope! Sometimes we need a moment to gain our sanity. Hiding is better then snapping at them! I’ve been dealing with a teething baby for 2 weeks, who doesn’t sleep, the husband was out if town, leaving me to the kids, I’m clean eating (so no chocolate! Boo!), and the kid has been grounded since May 1. I feel like I may go crazy!
Thankfully we are visiting fam this weekend for Mothers Day, which means unlimited babysitters!!! 😀 And sleep for me because my mom doesn’t mind snuggling with the baby at night. SLEEP! I’d take a day for sleeping as my Mothers Day gift!
It’s been a weird May so far! Sleep deprived and stressed out but I managed to list a pound this week. One pound! Ill take it!
..and now I can hear the baby fussing, asking for mama..
That break was nice, while it lasted. Time to get back to the real world!
