Whats the 21DFX?

While my focus recently has been on health, a portion of that does have to do with my weight and I know that where Im at now simply is not best for my body. Since the birth of baby num 3, Ive lost 30 lbs but the beginning of this year I hit a standstill even though I still have the goal of losing 50 (ish) more lbs. Instead of getting discouraged and giving up because it wasnt happening, last week I pulled the trigger on a great fitness program that will hopefully put me even closer to my goal!

The program is 21 Day Fit Extreme and it focuses on exercise along with nutrition. As the title suggests, its only for 21 days but the short length of time is made up by the intensity of the program. I like a challenge and this most definitely fits the bill. The exercise portion is pretty easy to follow, you do the assigned workout every single day. In place of a rest day there is a yoga ‘active recovery’ day (good for me because I ❤ yoga). The diet portion is a little more complicated but sooo worth it! Its based off a recommended calorie bracket and corresponding containers you use to measure out your food. The food segment is where I really want to challenge myself!

For the past 3 years I have been vegetarian (dont eat animals but still eat egg/dairy). A decision I made for mostly health reasons vs ethical reasons. (Full disclosure, with the rare occasion of eating sushi or seafood, which is not something I really do anymore because seafood is still eating animals.) With this program I am really trying to focus on getting all of the animal products out of my diet. 21 DFX with a Vegan slant! That means no butter, eggs, cheese, milk… A clean, plant based diet!

Why? Well this something my husband posted on my Facebook, a year ago today!


I remember this! I was overdue with our baby Joseph and went grocery shopping one last time before my induction (scheduled for the 2nd), whereupon I picked up these lovely items at the grocery store: stuffed crust pizza (I picked off & threw away the frozen pepperoni, ew I know), jalapeno poppers, nutella, and oreos. Having the label of ‘vegetarian’ doesnt necessarily mean that you eat healthy and when you eat this crap all the time instead of rarely, no bueno. Believe it or not, this was me eating better then how I had been eating a meat eater! Eating better but not great. Its easy to fall into those same bad eating traps and changing those habits has taken some time.

So thats where the 21 Day Fix Vegan Extreme comes into play. Really focusing on what exactly Im eating and the effort I put into exercising to see some awesome weight loss results! (Plus, we are going down to the Keys for vacation and I have no shame to admit that I want to look as hot as possible in my bathing suit! Hahaha.)

News flash, it’s almost April. You know what that means? Summer is nearing! This summer I will have a child who turns 10 and will then be in the double digits for age. The baby will turn 1 and will be on his way to walking and talking. Insane! And we will be celebrating these birthdays in the Florida Keys! Key Largo, here I come! … Bathing suit season … Here. I. Come.

I know I’m not the only one trying to get that sexy summer bod! 😉 Hows it going out there? It’s way too easy for me to give into ordering take out or eating out so my diet got a little wonky the past two weeks. Planning and preparing meals in advance solves that problem completely! (Along with observing a little self-control and actually eating what you plan.)

Last week I ordered some food trays to use for meal prep, they come divided into 3 sections but there are other variations you can get as well (I might order the bowl style for stir fries). I ordered them from Amazon, here. It’s kind of a thoughtless meal, like a frozen TV dinner kind of thing, but hopefully you don’t fill it with crappy food. I like that there’s room for everything – all your protein, carbs, and veggies.

The packaging says you can also freeze them so cook in bulk, divide meals up in the trays, freeze, and take out for a quick meal later on. Pretty darn helpful for example, a pregnant lady wanting to eat healthy meals after the baby comes. Or if you have to go out of town and leave your hubby at home, he will be able to survive without suffering through whole days of nothing but coffee, Hot Pockets, and Ramen Noodles (YEP, my poor husband).

Yesterday I had some free time while the baby was napping and the other 2 kids were playing, to tackle this task. It was pretty simple but did require a chunk of time to get it all done. Beans, veggies, and sweet potatoes. That’s it! Im still learning but I hope to get pretty good at this meal prep business. If you don’t already, you should give it a try!

If I don’t put my health first, who will?

I know it’s a hard thing to do, putting your health first. You’ve got so many responsibilities already (job, husband, children, church, school) and there is only  24 hours in a day.

I’m the busiest now then I’ve ever been. I don’t think I’ve ever worn so many hats or have had so many things going on in my life. We moved into a new home a few months ago and the process of building a new home, selling our old home, moving, and settling in to this place has not been an easy transition. Add to that the stress of welcoming a new baby and being a nursing mom who still does not get to sleep through the night. The joys of toddlerhood and dealing with my 3 year old’s new found independence.. (I’m a big girl now so I want to do everything by myself, even when I really should have help.) Tackling homeschooling with my awesome 9 yr old, who get distracted easily and needs constant reminders to stay on task. Supporting my husband, who works so hard in order for me to have the privilege of staying at home with the kids.

There’s just been a whole slew of things that need my attention! The busyness of life. Life complicates things and makes things difficult. But what about ME? All those things up there ^^ are things I do for other people. What do I do for myself? Why should I even bother adding another thing into the already complicated mix? I finally found the answer (and no, husband if you’re reading this, it’s not to go shopping and buy all of the pretty things) … I took control of my health because if I don’t put my health first, then who will??

Continuing down the path of … eating like crap, not being active, beating myself up for not looking a certain way, being run down with little energy, stretched in a million different ways, living with a fake smile painted on my face, and feeling like crap. Pouring everything you’ve got into everyone and everything else so that there’s 0% left over for yourself, it’s a miserable way to live. You end up having a busy life, full of responsibilities, but at the expense of yourself and your spiritual/physical needs.

I was tired of being completely empty and having nothing left over for myself.  Even though there are only 24 hours in a day and I am already so busy, I took a leap and made that choice to put my health first. Where Im at now is so much better then where I was at 2 and a half years ago. I became determined to change things, so that I can continue giving my all to others without losing myself.

Are You Hungry? Caramelized Banana Peanut Butter Toast

If you’re about to read this and you’re hungry, just stop right there. Don’t read any further without first eating a snack. Because if you love peanut butter like I do, this will make you haungry! I made this the other day as a post workout snack (hello 12g protein). Its savory and sweet, and would also be perfect for breakfast or dessert as well. Oh and healthy. Yeah there’s that too! You could fix this without caramelizing the banana but then it just wouldn’t taste as good. Hahaha. Really, just take the extra step, you’ll thank me.

Caramelized Banana Peanut Butter Toast

  • Bread (whole wheat or Ezekiel)
  • Natural Peanut Butter
  • Ripe Banana
  • Honey (optional)
  • Cinnamon (optional)

Peel and slice the bananas on the diagonal. Heat a skillet on medium-high heat, using non-stick spray. When hot, in a single layer add the banana slices. Cook approx. 2-3 minutes or until bananas start to brown. One at a time, flip banana slices over. Continue to cook until that side is also brown, 2-3 minutes. Remove from heat and cool. Toast the bread and spread on peanut butter. Layer the bananas on top. Sprinkle a dash of cinnamon or a drizzle of honey, if so desired. Cut toast on the diagonal to make it look fancy. Enjoy!

I used Ezekiel bread, which can be found in the freezer section, but any whole grain bread would be fine. Just make sure you take note of the serving size. Additionally, use peanut butter of choice but make sure its the natural kind, free of preservatives, artificial flavors, colors.

You could also turn this into French Toast by making this into a sandwich, instead of toasting the bread simply cook it as you would a classic French toast. You could also top whole wheat pancakes or waffles with the caramelized bananas. Yes!

Why waste such a gift?

Ive missed yall! I took a little time off for Christmas break to visit with family and friends. The kids got ridiculously spoiled with tv, late bed times, sweets, and unlimited attention. I admit I enjoyed the unlimited babysitters! And I might have also indulged a bit on christmas treats. But seeing as how tomorrow is Weigh in Wednesday, Ill save those details for then.

Christmas is always a special time for us. Remembering the people weve lost and how we all use to spend our Christmas’ together. In particular … remembering the traditions we had with my brother and his wife, who both died from cancer some 16 years apart from each other. My sister in law would make this delish pumpkin roll for a dessert. You can buy it in grocery stores but theres nothing like homemade pumpkin rolls! And my brother who always brought my parents a huge real Christmas tree.  We havent had a live tree since the last one he brought us.

I dont know, I think going through loss at a young age shapes the way you look at things, or at least, it did me. My brother was this huge teddy bear of a guy that lost his fight with melanoma Super Bowl Sunday when I was in the 6th grade. I watched cancer destroy my brother, until he was too weak to even move .. and my mom had to crush up his pain pills & add water in order to feed it to him using a baby’s medicine dropper. Seeing this strong, healthy guy brought low by cancer .. although I kick myself for wasting so much time in my 20’s from unhealthy habits, at least Ive finally come to a point where I refuse to live like that anymore. Why waste such a gift!

This year the kids’ gifts from us were bikes! My toddler got her first (Frozen) bike and the big kid got a super cool mountain bike. Watching their reactions to their surprise was priceless! My husband had to take a little time teaching the toddler how to ride it but when she finally got it, she really got it: “See you slow pokes later!” as she rode off to try and catch up with her big brother. It was so sweet. And now! Now I will be able to keep up with my kids as we all go outside to play. I wont be that mom sitting on the couch, too out of shape to join my kids. Note: you will not catch my butt on a bike! Rather, Ill be running with them. And that is the best gift I could have!

Whats on your list?

Your Christmas list! What do you have your eye on? I always like getting jewelry, what girl doesnt?! And I also have a slight obsession with Vera Bradley so I wouldnt mind adding to my collection! (Hint hint husband!) But aside from that and more practical items for our house (like blinds, but thats no fun!) I wasnt sure exactly what I wanted.

Then I remembered seeing some goodies on Instagram from people who I look up to, in terms of fitness and overall healthy lifestyle. Well what better gift for myself then something thats going to help me achieve my goals! I thought Id share the items with yall, in case anyone else was interested.

6 Pack Fitness has this meal bag, sort of like a lunch box for superwoman (or supermoms)! I know that might sound kind of lame at first but really, its very popular and gotten wonderful reviews. The website description: The biggest innovation in meal management for the fitness elite. Fitness elite, I kinda like that! 😉 Its a cooler bag that holds everything you need for up to 5 meals. When I go out of town, on vacation, or just to visit family I have always struggled with my nutrition. I fall right back into those old, familiar, unhealthy habits. Now I can plan out what my meals will be and stay on track! Plus, being a veggie eater, I dont know exactly what ingredients other people use when cooking meals. Something about I do not eat meat just doesnt click for some people, when someone cooks whatever and they say, “Oh you can just pick out the meat and still eat it” … say what?! Um noooo thank you! Ill just drink some water. Its a little bit of an investment but I think its so worth it because now Ill be able to fix my meals, know exactly whats in them, and stay on track with making healthier choices!

Blender Bottle shaker cup will make it easy for me to drink my protein drinks on the go. No need to leave the house hungry because I can simply take my drink with me. No need to tote my blender around like a crazy person whenever I go out of town! Lol. Blender Bottle makes snack jars so I can also take snacks wherever I go. These containers will make it so much more easy and no squashing my snacks in a zip lock bag! These two items are much more reasonably priced so if you cant swing the 6 Pack Fitness bag then you can at least get these.

I know the New Year is usually the time when people start thinking about losing weight, being a better version of themselves, getting healthy and all that jazz .. but why not start now! This year my Christmas Wish List are gifts that will help support my goals. (Plus a Vera bag because why not! Haha)

How much water are you drinking?

The baby is taking a nap, my threenager is distracted with Daniel Tiger, and my big kid is taking a History test.. so I have a little free time. Time for a BLOG! 🙂 Those of you with children know all too well the *joys* of your kids having access to cartoons. They can be a blessing (aka babysitter, lol) when you need to get things done. Trying to be productive with kids running abound is nearly impossible. So yes, I needed some quiet time yesterday & I let PBS Kids babysit my toddler. (No shame either, any SAHM will tell you shes done the same thing or shes lying!) However, I ended up having these ridiculously annoying kiddy songs stuck in my head for the entire day! “I love to spell! S-p-e-l-l! I really love to spell.. s-p-e-l-l” And anytime I had to use the bathroom, “If you have to go potty stop and go right away! Flush and wash and be on your way!” Gee thanks, Daniel Tiger, thanks for the potty training reminder. 😉

Ive been trying to up my intake of water. “They” say to drink half of your body weight of water in oz. Thats a bunch of water! And thanks to all that water, I sang that dumb potty song at least 50 times yesterday. (And in true toddler form, when I use the bathroom the threenager likes to tear the toilet paper for me because, as she sings, “You can be a big helper in your family!“)  This is a good site that gives details about water consumption. As a nursing mom who works out every day its most defiantly important to get all my oz in to replenish what I loose. Plus water is fantastic for your skin.. Who wants pimplie, dull, wrinkled, saggy skin?! Not this girl! I like to drink a glass of water first thing in the morning, a glass before eating any meal, a glass during my meals, and a glass when I think Im hungry. A big problem I have is that my natural default when Im bored, relaxing watching tv/movies, or on the computer is to snack. Often times I dont want a healthy snack. Whats better then a little crunchy snack? Water! I also drink a glass of water when I feel like snacking out of boredom.  After you get into the habit, it gets easier so that you dont have to be constantly be tracking how many glasses. I started out with using my favorite HUGE Twilight cup to drink out of, one cup full of that thing is a ton of oz in one sitting.

If youre one of those people who like to use the excuse that you dont drink enough because you dont like the taste, or even if youre getting bored with just plain water.. You can always make fruit infused water. Healthy and super yummy! I got my pitcher from Target a few years ago but you can order them from Amazon. Cold water, some ice, and your fav fruits! Easy. And if you let it sit over night itll taste even better.
