Are You Hungry? Healthy Nutty Apple Oatmeal

Right now Bethany is chewing on my keys! I know, I know… ewww! And I usually am a freak about germs. She will be 10 months on the 14th and has never gotten sick. ūüôā (Goodness, I hope I just didnt jinx myself) Shes like a puppy!¬†B is¬†attracted to germy, smelly things (shoes and socks).¬†And paper…. omgosh…she loves the stuff!¬†She only has her two bottom teeth but¬†she will bite on paper and tear at it like shes chomping on a tbone steak. She would be in baby heaven if I gave her 10 mins alone with my iPad, something about its shiny screen screams, “Lick Me!!!”¬† Yeah, totally like a dog. Arnt babies FUN?!

Heres a picture of her ‘playing’ with her brother’s legos earlier this morning. I was eating breakfast..dont worry.. she was being supervised the whole time. She wasnt able to grab any legos, but she sure did try. (And yes, since then I have moved the legos).

Now the real point of this post… When we woke up this morning Bethany was content with playing nicely in her high chair, which gave me some extra time to come up with a yummy breakfast.¬†I found this apple oatmeal recipe online that sounded delish.¬†Then I noticed it would take a freakin HOUR to bake in the oven. Um…No! I was too hungry for that. So I changed it up and made my own version. ūüėõ Im sure it tasted just as good! Ha!

Healthy Nutty Apple Oatmeal (4 servings)

Healthy Nutty Apple Oatmeal

Healthy Nutty Apple Oatmeal

2 cups old fashioned oats (NOT instant oatmeal)
4 cups water
1/2 teaspoon salt
1 tablespoon sugar (optional)
1 tablespoon ground cinnamon
1 large apple, pealed and cut
4-5 heaping tablespoons wheat germ (optional)

1/2 cup of raisins (optional)
1/2 pumpkin seeds

Bring water, salt, and sugar to a rolling boil. Add oats, reduce heat to medium and cook 5 mins, stirring occasionally. Remove from heat, cover, and let sit 2-3 mins or until liquid is absorbed into the oats. Then sprinkle in toppings, stir. NOTE: If you like extra creamy oatmeal, right before serving stir in a splash of (soy) milk.
Also the wheat germ is just for that extra boost of nutrition (folic acid, iron, fiber, and zinc). Its an excellent ingredient to add to your diet if you are a veg-eater. Its really good for you and can be put into lots of different foods. Click on the link to find out more.
