So I had these red potatoes in my pantry and I didnt know what to do with them. The last time I made them I put herbs and oil on them and baked them in the oven, they were just ok. So I had been avoiding cooking the rest of them. Meh. I hunted pinterest and google for a yummy yet healthy recipe and found this one… Here. Its a Potato Salad with Veggie dish. 🙂 Yesss! Problem is that Im a texture girl. I dont like mushy and crunchy together. You know what I mean…? The dish calles for cooked potatoes mixed with a light sauce and fresh uncooked veggies added. Blah! Instead I changed it up a bit and found that I really liked it! My recipe below is for 2x the sauce because Im a saucy kinda gal. 😉
Oh, and side note: this dish is a great wat to introduce some extra veggies into your child’s diet. The son loved the potatoes! He had no idea the sauce was made with peppers, onions, and garlic.
Red Potatoes with Green Veggie Sauce
- 4-5 cups baby red potatoes, cut in quarters
- 1 green bell pepper
- 1/4 – 1/2 a red onion
- 5 cloves of garlic
- 2 teaspoon dijon mustard
- 2 tablespoon extra virgin olive oil
- 2 tablespoon red wine vinegar (could also use champagne or balsamic vinegar)
- 2 tablespoon honey (optional)
- 1/2 juiced lemon
- 2 tbsp reduced fat mayonnaise (or Vegenaise)
- salt and fresh pepper (to taste)
Boil the potatoes in salted water until they are tender, about 8-10 minutes. Being careful to not over boil. Drain and while cooling prepare the sauce…
Roughly chop the bell pepper, red onion, and garlic. Place into a food processor and mix together. Add dijon mustard, oil, vinegar, honey, lemon, and mayo. Mix together until soothe. Taste. Add salt and pepper as desired.
Pour sauce over the potatoes and mix well. Serve and enjoy!
Note: If you like a little texture, you can also add a bit of finely diced bell pepper, red onion, and garlic. If you like spice you can also add some finely diced jalapeno to the dish. If you want to play with flavor you can also add a sprinkle of dill or some diced celery.
