Are You Hungry? Caramelized Banana Peanut Butter Toast

If you’re about to read this and you’re hungry, just stop right there. Don’t read any further without first eating a snack. Because if you love peanut butter like I do, this will make you haungry! I made this the other day as a post workout snack (hello 12g protein). Its savory and sweet, and would also be perfect for breakfast or dessert as well. Oh and healthy. Yeah there’s that too! You could fix this without caramelizing the banana but then it just wouldn’t taste as good. Hahaha. Really, just take the extra step, you’ll thank me.

Caramelized Banana Peanut Butter Toast

  • Bread (whole wheat or Ezekiel)
  • Natural Peanut Butter
  • Ripe Banana
  • Honey (optional)
  • Cinnamon (optional)

Peel and slice the bananas on the diagonal. Heat a skillet on medium-high heat, using non-stick spray. When hot, in a single layer add the banana slices. Cook approx. 2-3 minutes or until bananas start to brown. One at a time, flip banana slices over. Continue to cook until that side is also brown, 2-3 minutes. Remove from heat and cool. Toast the bread and spread on peanut butter. Layer the bananas on top. Sprinkle a dash of cinnamon or a drizzle of honey, if so desired. Cut toast on the diagonal to make it look fancy. Enjoy!

I used Ezekiel bread, which can be found in the freezer section, but any whole grain bread would be fine. Just make sure you take note of the serving size. Additionally, use peanut butter of choice but make sure its the natural kind, free of preservatives, artificial flavors, colors.

You could also turn this into French Toast by making this into a sandwich, instead of toasting the bread simply cook it as you would a classic French toast. You could also top whole wheat pancakes or waffles with the caramelized bananas. Yes!

What in the World?

Oh Hi there yall! I havent disappeared, promise! I did sorta drop off the face of the blog-world. Sorry guys!!! Xoxo. But Im back (for real) to bloging now. I did really miss it and am thrilled to give a mini update. Big things have happened since my last post a year ago. You see…

I had a BABY! A sweet little boy born in July. I am now a (homeschooling) mom of three! A 9 yr old, my threenager, and 4 month old. (Yess, I might have lost my mind, just a tad.) We built a house and moved in a few months ago. Things got real crazy up  in here and Im trying to find a balance through it all. Its been quite a challenge.

One huge thing I noticed was the nagging little voice in the back of my head reminding me of how much I enjoy this blog, “Come back! Make a blog post! You know you wanna!” … It did help keep me accountable and I LOVE learning more about health and wellness. Being able to share that with others is really what its all about! Im excited to start back with my blog.

And woohoo! I have continued with my vegetarian diet, that hasnt changed. I had a very healthy and happy pregnancy, now Im back to kicking butt and getting into shape. I have 25 more pounds to go until Im at my pre-pregnancy weight (185lbs). Im trying to not let the scale get me frustrated because I have to FIGHT for every pound lost. 25 lbs… piish, I got this! Then Ill have about 40 more to go after that. Im stoked!! And ready to bring my sexy back!

Can You Forgive Me?

… Well, can you?? Ive been a naughty little blogger! Forgive me for being MIA! The fam and I took a road trip to Texas 2 weeks ago! Yes thats 900 miles in a car with a board 7 yr old, a sleepy 14 month old, and a husband who insisted on listening to the Les Meierables radio station on Pandora. 🙂 Needless to say, the trip was interesting (and FUN). The hubby was too busy doing work things so the children and I spent most of our time together. Have I mentioned how awesome my children are? They most def are! 🙂

Last week the baby came down with something. Im still not 100% sure what exactly she had. She was really grumpy, had a low fever, runny/stuffy nose. I think she was just teething because her fever only lasted for 3 days and she still has the runny nose. Except now she is constantly chewing on her fingers. Poor girl! Its time for another tooth to come in. So yeah, we didnt get a whole lot of sleep last week. Annnd I might have been in a crappy mood, lol. When mama aint happy, no ones happy! I didnt think yall wanted to read blog posts full of crazy, running on no sleep mama rantings! 🙂

This week is going good. Im determined to get back into my normal routine. As of this morning im at 185lbs. Meh. Not shocked there. Actually surprised that Im a little higher than that.. stress, no sleep, and I do not mix! Im changing things up slightly. On top of running 3 days a week Im also going to be doing Jillian Michael’s shed and shred DVD workout (that’ll be fun… insert sarcasm). And Im going to eat raw lunches. RAW! I need to be eating more veggies and fruits. So Ill be posting raw recipes from time to time. Btw, Im so far behind on posting my recipes. Ack! Look out cuz Ill be posting quite a few in the next week. 🙂

And to leave yall with a little inspiration. This was sooo my past 2 weeks … but Ive got to keep going.

Arnt you happy! 🙂 I know I am. Oh how Ive missed blogging. And oh how you’ve missed lots of fun times! I decided to take a little break during the holidays but now that things have returned back to normal I can dedicate more time into the blogworld. But don’t worry, I did NOT take a break from my veg eating habits! In fact I did quite the opposite.

During the month of December I decided to go vegan! For many different reasons, and some are a little too personal to share with the entire world, but yeah.. I went vegan for the month. I thought I would miss cheese the most. Actually that could not be further from the truth. Once I decided to stop eating it I was totally fine! Went out for Mexican- no cheese! Eating Italian- hold the parm. Making a sandwich- leave the cheese off. Its really not THAT hard considering I was already saying no to so many other animal products. Ive gotten good at saying NO. You’d be surprised at how much you could care less about cheese after going without it. The only time I really missed it was during Christmas dinner, my mom made mac and cheese and I was thiiiis close to grabbing a fork and But I didn’t! That was the only time I craved cheese (Ill make a blog post later about how to deal with cravings and weakness).

Truth be told, I wasn’t 100% successful in trying vegan for the month. I did slip up with chocolate and sushi. I was more like 85 or 90% vegan. Meh. Im definitely going to lean more towards vegan eating but I don’t want to use the label “vegan”. I feel like if I was going to be vegan then I would need to reevaluate so many other things then just my food choices. Theres more to being vegan then just what you put in your mouth; like what you will put on your body, what companies you will support by buying their products, what kind of items you consume… So yeah. Im going “plant base”.

Unfortunately, I have to cut this blog entry short. My children need tending to; the child just broke his glasses and the baby keeps trying to climb into my lap and “type” on the keyboard (as in, bangs her little fingers on the keys). Tomorrow Ill post about how my working out is going!! Im most excited about this! WOOHOO! And Ive got some big workout news!

And btw, after taking 2 months off from my Wednesday Weigh Ins, I cant remember where I left off. AhHaha! I was counting from the weight I was at when I started my vegetarian diet and I cant remember that number either. Blah! To make it easier on myself, Im just going to start the weight loss count from my highest weight, when I delivered the baby. 😛 Im thiiiis close to being back to my prebaby weight. When I get there Im going to post pics and all my stats!!! Yikes! That’s right, youll know my numbers! So, stay tuned. Cuz Im sure that blog will be …fun…

Are You Hungry? Weekly Meals

Hey-O! 🙂

Ive noticed that its been awhile since Ive posted any recipes. Well, you are in luck, because this blog is going to be full of recipes!! 😀 Im usually not one for planning my meals and end up going to the grocery store a few times a week. The nearest grocery store is just -ok-. Nothing fancy and it usually lacks some of the fresh veggies that I like to use, plus the organic section is practically non existent! (That doesnt make grocery shopping fun.) The same can be said for the other grocery stores in my town. Meh…. However, 45 mins away is a Whole Foods!!

Yessss. I love WF with their huge produce selections, fresh prepared foods, organic options, whole body section, and the bins. Oh the items in their bulk bins! WF gets me excited for healthy meal planning and hunting down those fresh ingredients. What I love most is that they have so many different food items, things Ive never even heard of before, it gets me excited to try new dishes. It makes me feel good, knowing that Im fixing healthy meals for my family. (No frozen pizza, no hamburger helper, no chicken nuggets, no prepackaged junk.) Oh and you might have the misconception that WF and similar grocery stores are too expensive, but you would be wrong. Its not too expensive for a veg! Calculate all the money you spend on meat… youre saving all that money and it can now be spent towards high quality, fresh, local, and organic produce.

Do You Know What Time It Is? Wk 5

Its Weigh in Wednesday time! Week 5.

And this week Im actually posting this on time! 🙂 So like I said in yesterday’s post, I went home over this past weekend… being home is not good for my weight loss! Being back home isnt usually a relaxing time– Im always on the go, rushing, running around all over town, doing errands for people, and trying to organize who gets to see the children when and for how long. Attempting to see all of the family, in-laws, and friends in one short weekend is not easy nor stress free. By the time Sunday afternoon rolls around Im ready for a nap … but I cant because I have to drive 3-3.5 hours back to my house before it gets dark, fix dinner, tuck the child and baby in bed, unpack the bags, and get ready for Monday. When Im stressed I tend to snack, eat junk foods instead of eating a real meals, I dont get much sleep, drink too much sodas, and am too busy to workout. So yeah, that was my weekend. Plus, yesterday I felt totally overwhelmed and had zero motivation to run to the grocery store to find something to cook for dinner. We went out to eat and I had… eggplant parm!!! :O Food as comfort = So not healthy.

Of course I felt guilty this morning for my crappy decisions, knowing today was WIW, and that I was going to have to blog about all that crap. Heh! But there it is! So how much weight do you think I lost, or gained? …. Ill get to it in a second! 😛 My lovely weekend back home just goes to show, that you can be a vegetarian and still be unhealthy. Im sure if I ate like that all of the time I would gain weight, feel like crap-ola, and be! Being a veg isnt just about what you cant eat, its more about what you should eat. “Oh sorry, Im a vegetarian, I dont eat animals… so instead of eating that hamburger Im just going to go stuff my face full of chips, french fries, mall pretzels with ranch dip, loaded caesar salads, and Little Debbie Snacks.” Lol! Yeah, thats not how veg eating should work!

So to be positive! Im going to let go of this past week, remembering what not to do, and move forward. As soon as Im done with this post, Im going to go read something fab out of Psalms! After dinner tonight Im going to get my run in. Ive made my weekly food list and will be going to the grocery store after I pick the child up from school. Do some extra housework because having a nice, sparkly, clean house always puts me in a great mood. And finally, tonight Im going to sign up for my first race!

Oh and last thing.. my weight!! I did not gain any weight but I also did not lose any weight! Im surprised and not too upset, considering the week that I had. But watch out! 😉 Next week’s WIW will be a lot better!!

Are You Hungry? Simple Sketty

I’m writing this quickie post on my iPad as the baby roams around the livingroom, getting into mischief. 😛 Actually, any mom will confirm that when there are babies/children around, no simple task is ever quick! Currently the baby has gotten into her big bro’s toys. The child left some of his toys downstairs and of course the baby discovered them, she is currently playing with his monster truck, wagon, cowboys, and army men. Apparently, the cowboys and army men are good teethers…? (Don’t worry, I made sure to check that she can’t hurt herself or accidentally swallow some parts.)


Anyways, I fixed a yummy dinner at the end of last week and I wanted to share. Sometimes I get so carried away in trying to find these super complex and fancy recipes on pinterest that I ignore the more simple dishes. And when Im running around like a chicken with its head cut off, easy is exactly what I need! What’s more simple then sketty?!
Im trying to be a less wasteful person, I already had the pasta and sauce in my pantry but I wanted to add to it to make it more delish. To the sauce I added onions, garlic, tomatoes, chick peas (in place of meat), and roasted bell pepper. Yum! If you’ve never roasted a bell pepper, try it! It’s easy and makes the pepper taste so much better. How to roast bell pepper in oven.

Simple Sketty

1 medium yellow onion, chopped
1 (15 oz) can chick peas, drained and rinsed
1 (14.5 oz) can fire roasted tomatoes
1 (6 oz) can tomato paste
1 roasted bell pepper
3 cloves garlic, diced
1 (24 oz) jar sauce — I like Bertolli Organic olive oil, basil, and garlic sauce
1 (13 oz) box whole grain spaghetti

On medium heat, in a lightly oiled sauce pot add onions, garlic, and chick peas. Cook 5-6 minutes. Add fire roasted tomatoes and roasted bell pepper. Cook 2-3 mins. Add sauce and tomato paste. Stir occasionally. Let simmer on low. Taste and add seasonings, salt, and pepper as needed. Let it simmer while cooking the pasta.
Cook pasta, al dente, as indicated on the box. Drain. Add sauce to pasta and cook on low, 2 minutes, to combine the sauce and pasta. Garnish with fresh basil. Serve and enjoy.
